Fresh Shrimp Cocktail
This party standby always goes fast. But... have you ever poached your own shrimp instead of using pre cooked? It's a game changer. Just buy frozen, peeled and deveined shrimp and thaw them. Follow the below method to infuse them with flavor for the most amazing shrimp cocktail ever.
What you need
For the shrimp:
2 pounds large (16/20) shrimp (raw, peeled, tail on)
2 lemons
coarse salt
¼ cup Tessemaes Green Goddess
For the cocktail sauce:
½ cup Tessemae’s Ketchup
1 -2 tablespoons prepared horseradish
1 tablespoon fresh lemon juice
ground black pepper
What to do
In a large pot, combine the lemons, salt, green goddess, and 8 cups water. Bing to a boil. Reduce heat to a bare simmer and add the shrimp. Cook just until the shrimp are opaque and curled, 2 to 3 minutes.
Immediately transfer shrimp to a colander and run under cool water. Pat dry with paper towels and refrigerate, covered with plastic, until ready to serve.
Stir together the ketchup, horseradish, lemon, and season with pepper. Serve the shrimp with the cocktail sauce.
