Scallion Mashed Potatoes
Serve these green potatoes up with any meal and it's an instant St. Pat's party! Watch out, they're so good you'll end up making them every week...
What you need
1 1/2 pounds Yukon potatoes diced into 1 inch pieces
coarse salt and ground pepper
4 tablespoons Tessemae’s Green Goddess or Zesty Ranch*
1 bunch scallions, chopped
½ cup parsley leaves
1 tablespoons Kerigold grass-fed butter (optional)
½ cup coconut milk* or half and half
What to do

Put the potatoes in a large pot, cover with cold water and add about a teaspoon of salt. Bring to a boil and cook until tender, about 12 minutes.

While the potatoes cook, puree the scallions, parsley, Green Goddess, and ½ teaspoon salt in a food processor until smooth.

Drain the potatoes and return to the pot. Turn the heat on low and cook for a few minutes, stirring, to get rid of any excess water in the potatoes.

Mash in the butter with a potato masher until smooth. With the heat still on low, add the milk, stirring and mashing until the milk is combined and potatoes are steaming hot. Season with salt and pepper.

Fold in the scallion mixture and serve.
