Grilled Prosciutto Wrapped Halloumi & Watermelon Salad
Halloumi is having a moment. If you have yet to try this awesome grilling cheese, here's your chance. We wrapped ours in prosciutto and served it with juicy Summer watermelon. It's the perfect salad for a hot Summer day.
Serves 4
What you need
1, 8 ounce chunk Halloumi cheese, sliced into 8 pieces4 slices prosciutto, halved lengthwise
1 ½ pound piece seedless watermelon, cut into slices
2 bunches (12 ounces) arugula or baby lettuces
1 small bunch mint
¼ cup Tessemae’s Balsamic
coarse salt and ground pepper
What to do
- Heat your grill to medium high. While the grill heats, assemble your salad. (You want to wait until right before eating to grill the cheese, so it stays warm.)
- Arrange the greens, watermelon, and mint on a platter or 4 plates.
- Slice the halloumi into 8 pieces. Wrap each piece in a slice of prosciutto. Brush the grill grates with oil and grill the cheese until charred and starting to melt, about 1minute per side.
- Add the warm cheese to the salads and drizzle everything with more Balsamic.
