Sweet Potato Soup with Za'atar Seasoning
Happy new year everybody! We've decided to live our best life this year by eating this silky, flavorful soup. This recipe takes sweet, hearty sweet potatoes and blends them with some much needed zing via Za'atar seasoning—a Mediterranean blend of oregano, thyme, sumac, marjoram, and sesame seeds.
Makes 4 servings
What you need
4 tablespoons Tessemae's Lemon Garlic2 carrots, chopped
1 onion, chopped
3 tablespoons Za’atar seasoning
5 medium sweet potatoes, peeled and cut into 1-inch pieces
5 cups water
3 cups chicken stock or bone broth, preferably homemade
coarse salt
What you do
- In a large saucepan, heat 2 tablespoons Lemon Garlic over medium-high heat. Add onion and carrot to pot and cook until softened, about 8 minutes. Add the sweet potato and cook for 1 minute.
- Stir in za’atar seasoning and cook for 1 minute. Add water and chicken broth and bring to a boil. Reduce heat to medium-low and simmer until potatoes are very tender, about 30 minutes.
- Puree soup using a blender or an immersion blender and add remaining 2 tablespoons Lemon Garlic while blending. Add salt to taste and serve immediately. Add more water if needed to thin soup out a bit.
