The Green Garbanzo: Chickpea’s Younger and Healthier Sister
Mmm…are those peas? No.
Edamame? Try Again.
Well, what are these buttery little legumes?
They’re Green Garbanzo Beans! Around the world, garbanzo beans (aka chickpeas) are the most widely consumed legumes. (Do you like what we did there?) Green garbanzos are harvested earlier than regular garbanzos, but otherwise, there is no difference between them and their older chickpea sisters. And there are a ton of reasons for their serious popularity.
These baby green chickpeas are pretty cute, nutritious to boot, and with their nut-like taste and buttery texture, what’s not to love?
So let’s talk nutrition. Green garbanzos are serious nutritional powerhouses. They are full of fiber, antioxidants, and protein. They also register low on the glycemic index. This means that green garbanzos will make you feel full, and will support healthy digestion while simulataneously helping to regulate your blood sugar. Sounds good all around! Bring on the beans.
