Thai Chicken Salad Lettuce Wraps
Prepare yourself—this dish is unbelievably delish. It may look deceptively simple, but these few ingredients come together so well, this dish will be in your regular rotation before you know it. Might want to go ahead and double this recipe for lunch tomorrow!
Makes 4 servings
What you need
1 pound ground chicken
1 bunch scallions, thinly sliced
½ of a small red onion, thinly sliced
1 tablespoon finely chopped jalapeno
1/2 cup Tessemae’s Sesame Ginger or Soy Ginger
½ cup chopped cilantro
¼ cup chopped mint
coarse salt and freshly ground black pepper
lettuce leaves for serving
What you do
- Cook chicken and ¼ cup water in a large skillet over medium heat until cooked through, or around 7 minutes, being careful not to let chicken brown.
- Stir scallions, onion and jalapeno into pan and cook until veggies have softened, about 4 minutes.
- Stir in Sesame or Soy Ginger, cilantro, mint and salt and pepper to taste and stir to combine.
- Serve immediately with lettuce leaf wraps.
