Shrimp & Veggie Packets
Weeknight dinner prep just got MUCH easier. These packets are a snap to put together, and the best part is that different veggies can be subbed in for the ones here. Just use whatever you have on hand—too easy!
Makes 4 servings
What You Need
1 pound large peeled, raw shrimp2 shallots, thinly sliced
1 large zucchini, thinly sliced on a mandolin
1 cup carrot matchsticks
1/3 cup Tessemae’s Green Goddess
coarse salt and freshly ground black pepper
cauliflower rice, for serving
What you do
- Heat oven to 400 degrees. Lay out 4 large sheets of foil, each about 12 x 15 inches.
- Stir together shrimp, shallots, zucchini, carrots and Green Goddess, and 1/4 teaspoon salt and 1/8 teaspoon black pepper in a large bowl. Divide shrimp mixture between foil sheets.
- Fold foil over shrimp mixture, folding along all 4 edges. Bake foil packets until shrimp is cooked through, about 20 minutes. Serve over cauliflower rice; eat right out of the packet or transfer contents to a plate if you’re fancy.
