Roasted Pork Tacos with Pear Salsa
It's Taco Tuesday! Try this fall spin on tacos, using leftover pork from our Roasted Pork Tenderloins.
What you need
½ roasted pork tenderloin (leftover from Roasted Pork Tenderloins recipe)
1 Bosc pear, diced
¼ red onion, minced (1/4 cup)
¼ cup chopped cilantro
¼ cup golden raisins
¼ cup Tessemaes’s Balsamic
coarse salt and ground pepper
4 soft tortillas or lettuce leaves
Greek yogurt, for serving
Lime wedges, for serving
What to do
Slice the leftover pork tenderloin. In a small bowl toss the pear, red onion, cilantro, raisins and the Balsamic. Season with salt and pepper.
Make tacos with the pork, salsa, and tortillas. Serve with the Greek yogurt and lime.
