Gluten Free Thyme and Pepper Biscuits
Consider this your NYE Party hack: buy an awesome quality baked ham and serve it with these biscuits as your centerpiece. Round it out with our Honey Mustard and mayo, maybe some pickles, and why not throw in some brie or grassfed cheddar cheese? This is a meal in itself. Have a couple bowls of nuts or veggie sticks on hand, and you have a full cocktail party. Happy (almost) New Year! PS... don't forget the bubbly!
What you Need
For the Biscuits:
2 cups King Arthur gluten free flour, spooned and leveled
1 tablespoon baking powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
2 teaspoons chopped fresh thyme leaves
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
1 cup almond milk or whole milk
For the Ham:
12 ounces sliced best quality ham
½ cup Tessemae’s Honey Mustard
assorted pickles and cheeses, for serving
What to do
- Heat your oven to 400. Line 2 large baking sheets with foil and grease the foil with butter or oil. Combine the flour, baking powder, salt, pepper, and thyme in a large bowl. Cut in the butter using a pastry cutter (or use a food processor and pulse just until peas sized pieces clumps form.)
- Stir in the milk, just to barley combine. Use a spring loaded ice cream scoop or a heaping tablespoon to dollop out about 24 biscuits on the prepared sheets. Be sure to leave at least 2 inches between biscuits.
- Bake until a toothpick inserted in the center of a biscuit comes out clean, 8-10 minutes. Transfer to a wire rack to cool.
- Serve the biscuits with ham, Honey Mustard, and other tasty treats.
