Watercress Salad with Chicken, Grapefruit, + Avocado
If you are human, chances are that you're still recovering from New Years Eve, or "starting the year off right!" with some good eating decisions. Either way, here is a clean, healthy detox recipe before you hit the weekend.
What you Need
2 bunches watercress (1 pound), stems trimmed
2 ruby red grapefruits
2 ripe avocados
1 pound cooked sliced chicken, or pulled rotisserie chicken
½ cup Tessemae’s Lemonette Dressing
¼ cup pistachios
What to do
- To cut the grapefruit into segments, see our how to here. Cut off the top and bottom of the grapefruit. Set it flat on your cutting board and use your knife to cut off the peel and white pith, following the curve of the fruit. Use your knife to slice out each segment.
- Arrange the watercress, grapefruit, avocado, and chicken on a platter or 4 plates. Top with the Lemonette and pistachios.
