20 Minute Chicken & Zucchini Soba
In case the ads all over the place have not warned you yet: back to school season is here. (Time for parents across the country to celebrate!) This time of year has us thinking about fast, healthy dinners that pack veggies and protein (brain food) for our little ones. This 20 minute meal does all that and more!
Serves 4
What you need
8 ounces soba
2 medium zucchini, spirilized or shredded
1 rotisserie chicken, skinned and shredded
coarse salt and ground pepper
1/2 cup fresh basil leaves, chopped
½ cup Tessemae's Sesame Ginger
3 limes
What to do
- Bring a pot of water to a boil for the soba. Cook according to package instructions. During the last 30 seconds of cooking, stir in the zucchini. Drain and rinse under cold water.
- Halve 2 of the limes and squeeze the juice over the noodle mixture. Add the Sesame Ginger and basil and toss to coat. Top with the chicken and another drizzle of Sesame Ginger.
