Smoked Salmon & Avocado Rolls
One of our favorite, easy, Whole 30 lunches! (Smoked salmon means the prep is really quick.) Goodbye boring salad, hello salmon rolls!
Serves 2
What you need
1/2 english cucumber
1 avocado
8 oz thinly sliced smoked salmon (see tip below)
2 scallions, thinly sliced
5 oz mixed greens
2 Tessemae’s Lemon Garlic Pouches (or your favorite Tesse Dressing)
dry roasted seeds, nuts or dried fruit (optional)
What to do
Cut the cucumber into sticks. Halve and pitt the avocado, cut each halve in quarters lengthwise. Wrap each piece of salmon around a cucumber stick and avocado slice. Serve on top of greens and scallions, with your favorite Tesse dressing and some seeds or dried fruit on the side. Can be refrigerated up to overnight in an airtight container.
Tip: If using as part of the Whole30: Be sure to look for Smoked Salmon, not Gravlox, and read the package to be sure no sugar is added.
