BBQ Bacon Jalapeno Poppers
Happy Super Bowl Sunday everybody! Now let's do this snack-a-palooza right. And that means no more sad, soggy bacon. So we decided on cooking the bacon by itself so it gets super-crispy (FTW!).
10 jalapenos, halved and seeds and ribs removed with a spoon
½ cup goat cheese or cream cheese (optional)
1/3 cup Tessemaes BBQ Sauce, Diggys or Matty’s BBQ Sauce

What you do
- Heat oven to 425 degrees. Spread bacon slices and jalapeno halves on two separate rimmed baking sheets.
- Fill jalapeno halves with about 1 heaping teaspoon of cheese (if using). Roast bacon and jalapenos for about 20 minutes or until bacon is crisp. Remove bacon and jalapenos from oven.
- Heat broiler. Brush bacon with Tessemae's BBQ sauce and broil for 1 minute. Remove bacon from oven and cut in half crosswise.
- Place 1 half bacon slice on top of each jalapeno half and secure with a toothpick.
