Lemony Shrimp Scampi and Sweet Potato Noodles

INGREDIENTS
1 tablespoon plus 2 teaspoons olive oil
3 cloves garlic, finely chopped
2 medium firm unblemished sweet potatoes, peeled and spiralized
coarse salt and freshly ground pepperÂ
½ cup water or broth
1 pound large shrimp, peeled and deveined, patted dry
1/3 cup Tessemae’s Lemon Garlic Dressing
2 tablespoons finely chopped fresh oregano
4 lemon wedges, optional

METHOD
- Heat 2 teaspoons olive oil in a large non-stick skillet over medium high heat. Add garlic, and cook, stirring until the garlic is fragrant but not browned, about 30 seconds. Add sweet potato, salt and pepper and toss with tongs to combine. Add water or broth and immediately cover tightly. Let the noodles steam until the sweet potatoes are just cooked, but the noodles are not falling apart, 4 to 5 minutes. Gently transfer to four pasta bowls and tent with foil to keep warm.
- Wipe out skillet and return to medium-high heat. Add the remaining 2 teaspoons oil and swirl to coat pan. Add shrimp in a single layer and let sear, undisturbed until the shrimp are curled and the bottom edges are starting to turn pink and opaque, about 2 minutes. Turn the shrimp over and let cook until they are pink and just cooked through, about 2 minutes longer. Add in Tessemae’s Lemon Garlic Dressing and oregano and stir to combine.
- Divide among the shrimp and sauce among the four bowls. Serve immediately with lemon wedges.
