No Cook Dinner: Thai Beef Salad
Ever get to 4 o'clock in the afternoon and still have NO idea what your family is going to eat for dinner? Us too (gulp). Grab this recipe and make a quick stop in your grocery store's salad bar & deli area and you got this (mic drop on dinner).
Makes 4 servings
What you need
1/4 cup Tessemae's Balsamic
3 Tb tamari or soy sauce
3 tablespoons lime juice
2 ½ teaspoons fish sauce
1 ½ teaspoons Tessemae’s Hot Buffalo sauce
1 pound rare roast beef, sliced 1/8-inch thick
5 scallions, thinly sliced
8 cups salad greens
2 shallots, trimmed and thinly sliced
½ of a large English cucumber, peeled and thinly sliced
1/2 cup basil leaves
1/3 cup cilantro leaves
1/3 cup mint leaves
1/3 cup unsweetened coconut flakes
What you do
- In a large serving bowl, toss together salad greens, shallots, cucumbers, basil, cilantro, and mint.
- Stir together Balsamic, tamari or soy sauce, lime juice, fish sauce, and Buffalo sauce. Drizzle half over roast beef slices and scallions.
- In a large serving bowl, toss together salad greens, shallots, cucumbers, basil, cilantro, and mint.
- Drizzle remaining dressing over salad mixture. Top salad with beef and scallions.
