Roast Beef Tenderloin with Creamy Horseradish Mayo

What you need
1 whole filet of beef tenderloin, trimmed and tied* (4 1/2 pounds)2 tablespoons Tessemae’s Lemon Garlic
1 tablespoon kosher salt
freshly ground black pepper
1 cup Tessemae’s Mayonnaise
2-4 tablespoons prepared horseradish
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh tarragon (optional)
What you do
- Heat your oven to 275 degrees. Place the filet on a parchment lined sheet pan and pat dry with paper towels. Rub the filet all over with Lemon Garlic. Sprinkle very generously with salt and pepper until well coated.
- Roast the filet of beef until the temperature registers 135 degrees for medium-rare, about 1 1/2 hours. Cover the filet with aluminum foil and allow to rest for 20 minutes.
- While the beef rests, make the Horseradish Sauce. Combine the mayonnaise, horseradish, parsley, and tarragon. Season to taste with salt and pepper. Serve alongside the beef with your favorite sides.
