Roasted Salmon with Creamy Cabbage Slaw
Always on the lookout for fresh ideas for slaw, here we used savoy cabbage—a round variety with tender (and very crinkly!) leaves and a mild flavor. Stir in any other shredded veggies you have on hand; this refreshing slaw would go great alongside any protein.
Makes 4 servings
What you need
½ cup Tessemae’s Zesty Ranch4 salmon fillets (about 6 ounces each)
coarse salt and freshly ground black pepper
¼ cup Tessemae’s Mayonnaise
½ savoy cabbage, cored and very thinly sliced
1 small yellow bell pepper, seeded and very thinly sliced
½ cup very thinly sliced radishes
What you do
- In a baking dish, pour ¼ cup Zesty Ranch over salmon, then season with salt and pepper. Let marinate at least 30 minutes at room temperature or up to one day refrigerated.
- Heat broiler to high. Transfer salmon to a foil-lined baking sheet. Broil the salmon, without turning over, until browned and just cooked through, 6-8 minutes.
- Meanwhile, stir together remaining ¼ cup Zesty Ranch and Mayo. Toss together cabbage, yellow pepper, and radishes and Mayo mixture. Season with salt and pepper. Serve with salmon.
