Shaved Cauliflower Salad with Prosciutto & Toasted Hazelnuts
We were so blown away by how good cauliflower rice is, we thought, why not eat this thing another way? It's called living your bliss, people. Oh and make sure you whip up this salad when it's the middle of summer and you don't want to turn your stove on.
Makes 4 servings
1 cup toasted hazelnuts
½ cup parsley leaves
10 thin slices prosciutto, sliced in half lengthwise
1 small radicchio, cored and very thinly sliced
1/2 cup Tessemae’s Lemon Garlic OR Green Goddess
coarse salt and freshly ground black pepper

What you need
½ of a head of cauliflower, cored and florets very thinly sliced on a mandolin1 cup toasted hazelnuts
½ cup parsley leaves
10 thin slices prosciutto, sliced in half lengthwise
1 small radicchio, cored and very thinly sliced
1/2 cup Tessemae’s Lemon Garlic OR Green Goddess
coarse salt and freshly ground black pepper
What you do
- Combine cauliflower, hazelnuts, parsley, prosciutto and radicchio in a serving bowl and drizzle with Lemon Garlic and sprinkle with plenty of salt and pepper. Gently stir together, then let sit for 30 minutes before serving.
