Sweet Potato Scramble with Everything Bagel Ranch
This easy scramble is so much more satisfying that a plain scrambled egg! Just toss some of our Big Batch Roast Sweet Potatoes in a pan, drizzle with our insane ETB Ranch, and breakfast (or lunch, or dinner!) is served.

What you Need
1 tablespoon Tessemae’s Lemon Garlic1 cup Big Batch Roast Sweet Potatoes
1 handful baby spinach, optional
1 avocado, optional
4 large eggs
coarse salt and ground pepper
Tessemae’s Everything Bagel Ranch, for serving
What to Do
- Heat Lemon Garlic in a medium saucepan. Add Sweet potatoes and spinach and cook until sweet potatoes are heated through and spinach is wilted.
- Add eggs and stir until scrambled.
- Serve topped with avocado and Everything Bagel Ranch.
