Miso Glazed Cod with Bok Choy
This is pretty much the best thing that ever happened to cod. We dare you not to like it. Wait... no. We TRIPLE-dog-dare ya!!
What you need
½ cup Tessemae’s Sesame Ginger Dressing
2 tablespoons white miso paste
1 tablespoon honey or agave
4 cod filets (about 6 ounces each)
1 large or 2 small bok choy
What to do
Heat your broiler to high. In a baking dish, use a fork to stir and mash together the Sesame Ginger, miso, and honey. Stir until the mixture is a uniform consistency. Put the cod in the dish, turning to coat and spooning some of the thick marinade over the top of each filet. Marinate at least 15 minutes or up to overnight (refrigerated.)
Meanwhile, trim the end of the bok choy and cut it lengthwise in half, or into quarters if large. Place in a skillet or saucepan with about an inch of water. Cover and steam until the bok choy is bright green.
Transfer the cod to a foil lined, rimmed baking sheet and spoon more of the Sesame Ginger and miso mixture on top. Broil until just cooked through, 6 to 8 minutes. The glaze should get shiny and almost blackened in spots. It will create some smoke in the broiler, but the end result is worth it!
Serve the fish and bok choy, drizzled with more Sesame Ginger Dressing.
