Elvis Poppers
Ok, ok, so there's no banana or sandwich, but the combo of nut butter and bacon was invented by Elvis, right? Try this killer flavor combo. It's paleo friendly and perfect for game night!
What you need
12 small sweet peppers or jalapenos
½ cup almond butter (we used Justin’s) or other nut butter such as cashew
2 scallions, minced
12 slice bacon, halved crosswise
¼ cup Tessemae’s Honey Mustard
¼ cup Tessemae’s Matty’s BBQ
What to do
- Heat your oven to 400. Line a rimmed baking sheet with foil. Halve the peppers lengthwise and scrape out the ribs and seeds with a teaspoon.
- Spread a little almond butter in each pepper half. (Fill the cavities only about halfway, or else they will over flow while baking.) Sprinkle scallions over the almond butter.
- Wrap each pepper half in a half piece of bacon, so that the end of the bacon is on the bottom side, tucked under the pepper. Arrange the peppers on the prepared baking sheet.
- Bake until the bacon is beginning to brown and the peppers are tender, about 15 minutes. Stir together the Honey Mustard and Matty’s BBQ. Serve as a dip for the poppers.
