Crab & Citrus Endive

What you Need
2 grapefruit2 oranges
½ pound back fin or lump crab meat
2 tablespoons Lemon Garlic
1 bunch fresh mint
8 heads Belgian endive
What to do
- Cut off the top and bottom of the grapefruits and oranges. Set flat on your cutting board and use your knife to cut off the peel and white pith, following the curve of the fruit. Cut out sections, then cut each section into small pieces.
- Place orange and grapefruit in a bowl and fold in the crab, herbs, and Lemon Garlic
- Cut the root end off of the endive and separate the leaves. Place on a platter and use a slotted spoon to top with the crab salad. Sprinkle with mint and serve.
