Blackberry Cobb Salad with Blue Cheese Dressing
Our Keto Approved Cobb salad has everything you need for a perfect meal- keto or not! Lots of protein from chicken, turkey bacon and eggs. (Look for the best quality you can afford, organic and cage free are best!) Healthy fats from avocado and our Creamy Ranch or Blue Cheese dressing, plus essential nutrients and dietary fiber from the blackberries. We think this version is even better than the classic.
Makes 4 servings
What you need
4 large eggs2 heads Bibb lettuce
2 roasted chicken breasts (from 1 rotisserie chicken), sliced
6 slices turkey bacon, cooked
4 Persian cucumbers, sliced
4 ounce piece blue cheese, broken into large chunks (we used Chevre in Blue, Ewe's Blue is another good non cow's milk option)
2 avocados, sliced
1/2 pint blackberries
1/4 cup snipped chives
1/2 cup World’s Best Blue Cheese Dressing or Tessemae’s Creamy Ranch
What you do
- Bring a medium saucepan of water to a boil; reduce heat to medium high. Carefully lower eggs into the boiling water and cook for 6 minutes 30 seconds. Immediately transfer eggs to a bowl of ice water; set aside. (Drain and refrigerate up to 3 days.)
- Arrange lettuce on a large platter. Arrange remaining ingredients over lettuce. Serve with plenty of our World’s Best Blue Cheese Dressing.
