Cosmic Jerry Shrimp Tacos
Serves 4
1 ½ pound peeled and deveined shrimp (see tip)
Coarse salt and freshly ground pepper

8 corn tortillas
2 cups shredded red cabbage
1 jalapeño, thinly sliced
2 limes, cut into wedges
1 small bunch fresh cilantro
½ cup crumbled queso fresco
Tip: Buy smaller shrimp for this recipe, they are cheaper! Unless there are fresh local shrimp in your area, buying frozen, peeled shrimp is a great option. Defrost by placing in a bowl and covering with cool water until thawed.

METHOD
- In a large skillet, heat coconut oil over medium high. Add the shrimp and cook, tossing, until just cooked through, about 3 min. During last 30 seconds of cooking, stir in 1/4 cup Cosmic Jerry Sauce
- Heat the tortillas. If you have gas burners, char them directly over the flame, using tongs to turn. If you have electric, warm them in a skillet or on a grill pan. Wrap the tortillas in foil or a tea towel as you go to keep them warm.
- Serve tacos family style with shredded cabbage, jalapeño, limes, cilantro, and queso fresco. Serve drizzled with even more Cosmic Jerry Sauce
