Grilled Pork Tenderloin & Radicchio
So easy and soooo delicious….this meal is one of those you can pull off in the blink of an eye. Be sure to have plenty of our Pantry Balsamic on hand—the sweetness in this dressing is a great counterpoint to the bitter radicchio and the charred pork.
Makes 4 servings
What you need
2 pork tenderloins (about 1 pound each)
coarse salt and freshly ground pepper
1/2 cup Tessemae’s Pantry Balsamic
2 heads radicchio
What you do
- Heat grill to medium-high. Sprinkle pork with salt and pepper. Place pork on grill and cover. Grill, turning every 2 minutes, until internal temperature reaches 145F, about 16 minutes total.
- Transfer pork to a cutting board, cover with foil and let rest for 10 minutes. Brush with ¼ cup Balsamic and slice before serving.
- Meanwhile, cut radicchio through the core into 2-inch wedges. Grill until lightly browned, about 2 minutes per side. Remove from grill, sprinkle with salt and pepper and drizzle with remaining Balsamic before serving.
