Spicy Cucumber & Carrot Salad
Kick off the holiday feast with this clean & fresh veggie-packed side dish. It’s a refreshing way to get more veggies on your plate. But! Don’t worry, we know July 4 wouldn’t be complete without a side dish that includes our creamy mayo. Be sure to double this recipe is you need 8 servings.
Makes 4 servings
What you need
1 English cucumber, very thinly sliced on a mandolin2 cups shredded carrots
½ small red onion, thinly sliced
¼ cup chopped cilantro
¼ cup Tessemae’s Zesty Ranch
3 tablespoons Tessemae’s Mayonnaise
1/2 teaspoon chipotle chili powder
coarse salt and freshly ground black pepper
What you do
- In a large bowl, stir together cucumber, carrots, onion, and cilantro.
- Stir together Zesty Ranch, mayonnaise, and chipotle chili powder.
- Drizzle sauce over cucumber mixture until well blended. Sprinkle with salt and pepper to taste. Chill for at least 1 hour before serving.
