Fresh Shrimp Cocktail
Do you know how much refined sugar is in the average cocktail sauce!? A lot!!! Using our Ketchup as a base means that this fancy app is Whole30 Approved, refined sugar free and, obviously, delicious!!!
Makes 8 servings
What you need
2 lb large deveined shrimp
¼ cup Tessemae’s Ketchup
½ tablespoon tabasco
2 lemons
½ tablespoon prepared horseradish
coarse salt and freshly ground pepper
What you do
- Bring a large pot of water to a boil over high. Fill a bowl with ice and water to chill the shrimp after cooking. Cut one lemon into wedges. Zest about ½ of the other lemon and reserve for sauce, cut the lemon in half.
- Reduce water to a simmer and add the shrimp. Season with salt, pepper and juice from 1/2 the lemon. Poach your shrimp until cooked through - about 4-5 minutes. Immediately transfer shrimp to ice bath to stop cooking.
- While shrimp is cooking, make the cocktail sauce by mixing Tessemae’s Ketchup, tabasco, reserved lemon zest, juice from ½ the lemon, horseradish, and salt and pepper to taste.
- Serve the chilled shrimp with lemon wedges, cocktail sauce and freshly ground pepper.
